Purple Garlic -From the Foot Hills of Himalaya’s

PURPLE GARLIC

There are different types of garlic available in the world and one among them is the purple Garlic. Himachal Pradesh is one of the major producers of best quality purple garlic in country. In Himachal almost half of rural population across six hill districts of the state depends heavily on Both apple and garlic crops for their economic sustainability, livelihood and prosperity in the region.

Sowing of purple garlic iS done from early of December ,it is done at a depth into soil at least 6-8 inches deep, removing stones, then level and smooth. Plant in rows 1-2 feet apart, 3-4 inches deep and 4 inches apart. Firm lightly and water gently and it is more labour intensive.

Two garlic varieties – GHC-1 and Agri-food Parvati – both known for large sized cloves, the Product Varieties comes in different size which is called as Triple A = (7 cm & Above) size. Double A (6 cm – 6.5 cm) Grade A (5 cm – 6 cm) Grade B (4 cm – 4.9 cm) Grade C (Below 2 cm – 3 cm ).

WHAT IS PURPLE GARLIC ?

Purple garlic – generally milder taste and scent, have larger cloves and retain their flavor longer than the White Garlic. It is grown in the upper hills of Himachal Pradesh. It only gets the Purple color when the whole environment is organic including air and water.
Presence of large quantity of organic pigment “anthocyanidin” is responsible for the “purple coloration”.
It is cultivated around the month of June . Purple garlic cloves are surrounded with a thick and stiff ‘neck’ with purple stripes.

Purple Glazer garlic can be used in both raw and cooked applications. It’s flavor will sweeten with roasting.

RECEIPE

DRY GARLIC CHUTNEY

INGREDIENTS TO MAKE DRY GARLIC CHUTNEY POWDER – (MAKES ABOUT 1 HEAPED CUP)

  • Garlic pods – 12 to 15

  • Desiccated Coconut – 1 cup

  • Red chilies – 6 to 7 (adjust based on spice preference)

  • Sesame seed – 2 TBSP

  • Salt – 2 tsp

  • Oil – 2 tsp

PROCEDURE TO MAKE DRY GARLIC CHUTNEY POWDER –

  • Clean the garlic and remove the skin. Heat 1 tsp of oil in a pan and roast the garlic until it is light brown. Remove it in a bowl and keep it aside.

  • In the same pan, heat ½ tsp of oil and fry the red chilies. Remove it on the same bowl as garlic.

    • Next fry the sesame seeds until it light brown. Place it in the same bowl as the rest of the ingredients.

    • Now add the remaining ½ tsp of oil and fry the desiccated coconut until it is light brown. Make sure you roast the coconut in low flame as it can burn very quickly.

    • Place it with the rest of the ingredients.

    • At the end fry the salt for just a minute. My mother always did this when she grinds dry powders as it increases the shelf life.

    • Let all the ingredients cool down to room temperature and then grind it into a coarse powder. Don’t grind it in one swing as the coconut and sesame will let out too much oil and become like a paste. Pulse the mixer in regular intervals.

  • Store the powder in an airtight container and use it as a condiment with chat items.
